—DETAILS—

Made of 100% pure copper, the Mauviel M’Passion Hammered Copper Jam Pan is loved by professional (and passionate) jam makers around the world for its unique ability to cook fruit quickly and evenly. Copper’s uniquely quick speed prevents fruits from overcooking before jam reaches setting point, and its uniform heating prevents hot spots and reduces the risk of burning or scorching jam. This also results in a smooth, consistent texture, brighter colour, and better taste, as more of the fruit’s natural, peak-season flavour is preserved rather than cooked away or overpowered by sugar. (No wonder Bon Apptit magazine calls it ‘the best thing to happen to homemade jam’.) The tapered sides of this generous 36cm pan make stirring easy, and the wide top promotes fast evaporation, and the bronze handles add old world charm. When not in use, it makes an excellent ice bucket for wine and Champagne especially with its hand-hammered finish, a symbol of Mauviel’s one-of-a-kind craftsmanship. This pan is suitable for all hobs except induction.

Note: Since copper is a reactive material, most copper pans come lined with a non-reactive material like stainless steel or tin. However, copper jam pans do not have such a lining that’s because the high sugar content of jam prevents the copper from reacting to the naturally occurring acids in fruits. In order to ensure there is no reaction, sugar should be mixed with other ingredients before being cooked in a jam pan. This pan is not suitable for low-sugar or no-sugar jams.
